Cheese is highly regarded in the SalzburgerLand: From Pinzgau beer cheese (“Pinzgauer Bierkäse”) to Tennengau alm cheese (“Tennengauer Almkäse”) and Flachgau hay-milk cheese (“Flachgauer Heumilchkäse”) up to goat cheese specialities from the Lungau region - passionate cheese-makers are constantly creating new cheese specialities. Refined with local herbs and fine spices, fine cheese variations are created.
You can taste it with every bite when the milk comes fresh from the mountain pasture and the cheese has had enough time to mature. On the alpine pasture, the alpine dairymen live in harmony with the seasons. Experienced cheese-makers refine the fine raw milk into delicious cheese in their traditional farms.
In some cheese dairies, visitors can even try their hand at stirring cheese and learn all sorts of interesting facts about cheese.
After the alpine cattle has grazed lush alpine meadows with healthy alpine herbs, milking takes place. In addition to the fresh cow's milk, the milk of sheep or goat is also used as a basic ingredient for the delicious cheese treats. With a great deal of intuition and passion, the best cheese is made: aromatic mountain cheese, smoky Schotten cheese and creamy fresh cheese specialities.
Whether with a hearty “Almjause”, as a spicy snack or as the crowning conclusion to a gourmet menu: The famous Original “Pinzgauer Kasnocken” (pasta-shaped dumplings with cheese & onions) are just one of many delicious cheese dishes from the SalzburgerLand.

There are own cheese alms (“Käsealmen”) like the so-called “Tennengauer Käsealmen”. These include the Spiessalm, Karalm and Schöberlalm in the Pongau municipality of St. Martin am Tennengebirge, which is also known as "Genussdorf" (Eating Out). In culinary terms, St. Martin belongs to the Tennengau culinary region (“Genussregion Tennengau”), which also organises the "Tennengauer Genusswochen".
