The „Culinary Region of Pongau game“ (“Genussregion Pongauer Wild”) – with its club headquarters in Bischofshofen – is a symbol of preserved tradition. Hunting and game have been part of the cultural heritage for centuries. And local game meat enjoys a very high status among health-conscious gourmets. It is easily digestible, has a low fat content, but is rich in nutrients and minerals (iron, calcium, phosphorus, B vitamins). As the name suggests, the game in the Pongau lives in the wild and can eat grass, herbs and moss. In order to ensure the quality and origin of the game, the hunters have developed their own seals for meat marking, which may only be used by selected hunters.
